BUCKET-BHATH (Plain Savoury Rice for a journey) Recipe

Fry in some ghee a little piece (about 1 in). of cinnamon, a pinch of haldi and 3-4 cloves. Add the rice and dal washed and cloth-drained dry. Add to this any bits of vegetables, peas, or tender cabbage, etc., about ½ cup is sufficient. Cook in the normal way, adding about 3 ½ cups of boiling water and salt and green chillies cut lengthwise.

Variations

(a) Omit cloves and cinnamon and make it plain.
(b) Add a little sambar or rasam powder.
(c) Add to the fat some udith-dal, and then fry the rice and dal in the fat.
(d) Omit vegetables and add cashew nuts or roasted ground nuts; or add them with the vegetables as well.
